Ingredients for Kitsune Udon
(serves 2)
2 packages of Frozen Udon Noodles
4 pieces of Sweetened Aburaage - thin deep-fried tofu

2 slices of Kamaboko Fish Cake
Wakame Seaweed
Spring Onion Leaves, Chopped
Shichimi - seven flavor chili powder

- Dashi Stock -
700ml Water (2.96 cups)
10g Iriko or Niboshi - dried baby sardines with the heads and stomachs removed (0.35 oz)
5g Dashi Kombu Seaweed (0.18 oz)
5g Bonito Flakes (0.18 oz)

- Broth -
600ml Dashi Stock (2.54 cups) or 600ml water+1 tsp dashi stock powder
1 tsp Salt
1 tsp Soy Sauce
½ tbsp Mirin

Optional: Egg and Tempura

きつねうどん(2人分)
材料2人分
冷凍うどん:2個
いなり寿司用油揚げ:4枚

かまぼこ:2切れ
わかめ:適量
青ねぎ小口切り:2〜3本分
七味唐辛子

▼うどん用だし
水:700ml
いりこ:10g(頭と腹ワタを取った正味)
出し昆布:5g
削り節:5g

▼かけ出し
うどん用だし:600ml(又は水600mlに和風だし顆粒小1­)
塩:小1
醤油:小1
みりん:大1/2

他のトッピング:卵、天ぷらなど
