STRAWBERRY BREAD PUDDING - (Serves - 4)
Ingredients
Strawberry compote for spreading
8 white bread slices
Butter for greasing and spreading
½ cup sugar
4 eggs
1 teaspoon vanilla essence
2 cups milk
Icing sugar for dusting
Method
1. Preheat oven to 180º C. Grease a large oval glass baking dish with some butter.
2. Discard the edges of the bread slices.
3. Spread some butter on 4 slices and some strawberry compote on remaining slices. Cover each butter slice with remaining slices, strawberry side down.
4. Cut each prepared bread slices into 4 equal pieces.
5. To prepare custard, combine sugar, eggs and vanilla essence in a bowl and whisk using an electric beater. Add milk gradually and whisk well.
6. Line the greased baking dish with bread pieces and pour custard mixture on top.
7. Place the baking dish on a baking tray. Put the tray in preheated oven and bake for 40-50 minutes or till custard is set. Remove from oven and cool.
8. Dust with icing sugar and serve immediately.
