These codes have been performed on an emulator (project64 1.6) with the European ROM.
Know your ROMs-

Mario Kart 64 (E) [!] - This is a PAL/Europe version ROM
Mario Kart 64 (U) [!] - This is a NTSC/American version ROM

If you don't know how to add cheats here's a tutorial...

4. TUTORIAL:
Before you can add cheats, you will have to make some changes you your project64 emulator.

First, open the main project64 window.
While playing project64, at the top of the window there is a set of tabs; 'file' 'system' 'options' 'help' along the top. Click the 'Options' tab at the top.
Following this, click the "Settings..." option. In the Settings window, click the "Options" tab. Uncheck the "Hide advanced settings" option then click okay.
Now you can add cheats...

Open up your Mario Kart rom, make sure you know which version of the game you are playing (either the American(NTSC) version or the European(PAL) version) otherwise these codes will NOT work.

Back on the main project64 window, click 'system' then go down to 'cheats...'
In the cheats box, right click then 'add cheat'
Give the cheat a name, then under where it says 'Code: adress value', enter the code
E.g. Triple Red Shell:

European(PAL) version-
8016609D 0006

American(NTSC) version-
80165F5D 0006
80165F8A 0006

Then 'add cheat' if it doesn't work you may not have entered it correctly
Also once the cheat is entered make sure you have ticked the box next to it in the cheats box
