Carrot Cupcakes are the best way to welcome Spring!

http://www.honeysucklecater...It’s almost Springtime and the sun is shining, the flowers are blooming, the birds are chirping, and the bunnies are a-hopping. And where there’s bunnies there’s gotta be carrots. So in celebrating a new season, i’m making the carrot cupcakes with a cream cheese frosting. This is a family recipe that has been passed down to me so I thought i’d put a few personal touches and share it with you! Subscribe and like if you want to see how it’s made.

Ingredients:
- 1 cup fresh grated carrots (2 small carrots)
- 1 cup flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp kosher salt
- ½ cup melted coconut oil
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup crushed pineapple
- ½ cup chopped roasted walnuts
- ½ cup raisins
Preparation:
I’m starting by grating 1 cup of fresh carrots, about 2 small carrots worth, and then setting it aside.
Then I’ll start with my dry ingredients in a separate bowl. I’ll add 1 cup of flour, 1 tsp of cinnamon, 1 tsp baking soda, 1 tsp of kosher salt and just mix everything together.
Next in a large bowl i’ll combine my wet ingredients. I’m taking ½ cup of melted coconut oil, 1 cup of sugar, 2 eggs, 1 tsp of vanilla extract and I’ll mix it well. Then I’ll take my dry ingredients and pour it into my wet ingredients. I’ll add my grated carrots, ½ cup of crushed pineapple, this will really help with keeping the cake nice and moist, ½ cup of chopped roasted walnuts - for that extra crunch and texture, and ½ cup of raisins. i know some people don’t like raisins but i love having it in my carrot cakes so it’s completely up to you. Mix everything well and it’s ready to be baked!
I’ll line my cupcake pan with paper and then i’ll just scoop the batter into each cup. I’ll bake it at 350 degrees for about 18-20 minutes until it’s nice and golden brown.
This cupcake is sooo good - it’s almost guilt free because you have fresh grated carrots in there, so it’s automatically healthy, right?. *wink* just kidding, everything in moderation.
I’ll take it out of the oven and let it cool completely.
At this point, you can eat it as is, like a muffin, but it’s so much better with a cream cheese frosting. You can find a link to my cream cheese frosting recipe at the end of this video.
