@bobbo924B he is using the command click to bypass the plug in but then adding the option key also to make that function happen on all tracks. Generally everything in pro tools you can press option to have it happen in all tracks.

Respond to this video... Despite the price this is the most sugnificant upgrade ever, until the next one which will be 64 bit. Under the hood it's a completly different animal from the past versions. The next upgrade price better be alot cheaper though.
