Amy's Berry Baked Quinoa & Oatmeal

1 1/2 cups fresh mixed berries
1 cup quinoa
1 cup oats
2 cups vanilla almond milk
1 toasted walnuts
1/3 cup maple syrup
3 tbsp earth balance (vegan butter substitute)
1 egg
2 tsp vanilla
1 1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp sea salt
a handful of brown sugar for topping

With your oven preheated to 375 degrees, mix dry with dry and wet with wet. Mix together quinoa, oats, half of your walnuts, cinnamon, baking powder and salt. Set aside and in another bowl mix together almond milk, maple syrup, earth balance, egg, and vanilla. Take your glass baking dish and shake out half of your mixed berries, followed by all of your dry mix. Next, pour your wet mix over top and use a spoon to make sure it completely covers all of your dry mix. Top with your remaining berries, walnuts, and a sprinkling of brown sugar. Place on center rack of oven and bake for 40 minutes until top is lightly browned and quinoa and oats are soft. Allow to cool and serve. Makes approximately 6 servings. Can be kept for a week in the fridge.
