congrats Mike...! The WSM does a good job -the water bath keeps your Q real moist during that "low and slow". We use an 18.5 but it's a bit tight when laying out full racks of ribs. That's no doubt the reason why Weber now sells a 22.5. A quality kettle grill can give you the same results with a little more effort. Keep in touch. -BBQ Pit Boys

just joking with you. Having said that, the dry high heat of the grill turns ordinary bread into killer bread. The crunchy bite of the sandwich makes it worth the effort.

first, use only top quality natural briquettes or lump(a bit more difficult to manage). Start the fire with a chimney. Your grill must have a tight lid, and the airflow can be easily controlled by the vents. You can get several hours or more of grilling at <300f with about 100 briquettes. -BBQ Pit Boys
