It's because at any point people can let go of the submission. It's not like you are unable to do it, or being kept from it.

I still love you Roxanne ;D you kickass and you put on a good show. Tough loss that you'll learn from and develop because of, but you fought like a happy warrior - seemed to smile during exchanges.

Side Note:
As much as MMA wants highlight reel finishes, i still don't understand how slamming someone on the back of their head is not the same thing as or WORSE THAN punching someone on the back of the head. Proponents say that it's the defenders fault for holding on to a submission. Regardless of any explaination it's still purposely driving the back of someones head into the canvas, which is incredibly dangerous. MMA rules and regulations are so screwed up and has so much room for improvement.
