I don't see many games with Sabaki, but I do agree that the lack of veasion focuses this game towards offense, but I do think you're underestimating the depth of the engine.
I don't know if 5 will continue this from 4, but the hit-stun wasn't really a limiting factor. If you knew where their mix-up was going (and with DoA it's difficult to create a truly surprising mix-up) you could still reverse as long as you weren't juggled, and every game except like GG, P4A, and BB keep that true.
