Hi, latency depends largely on your device so while I can make small improvements on my end (for those on JB 4.2), the Android version and hardware drivers are where the major bottleneck is (for ALL Android music apps)
As of this writing the lowest latency device is the Samsung Galaxy Nexus followed by the other recent Nexus series devices (N4, N7 and N10)

You can also search for SoundFonts by googling "free sf2 soundfonts".
I guess it depends what kind of instruments you're looking for.

Yes, but it depends on what you mean by "faster". If you mean increasing tempo, you can do that from the song menu.
If you mean trigger drums at closer intervals than 16th notes, you can long-press the pattern you're working on and select 32nd or 64th notes as the smallest grid resolution and switch grid mode to 32nd or 64ths.
If you want the HH samples to play for a smaller amount of time, you can decrease decay by turning that knob for the HH channel.
