    2.In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick.     To make the watermelon buttercream, divide vanilla buttercream in half, and place the white buttercream in a piping bag. Put aside for later. With the other half of the buttercream, combine a small amount of red gel paste and mini chocolate chips to create a "watermelon" look. Place into piping bag and set aside.

    To assemble the watermelon push pops, peel the wrappers from the cupcakes, cut the cupcakes into thirds. Using the circle cutter, cut the cupcake slices to size and discard excess. Starting with the green cupcakes, push 2 slices into the push pop and press down firmly. Using the white buttercream, pipe a small amount of buttercream on top of the green cupcakes. Next, insert the white cupcakes into the push pop and press down. Using the watermelon coloured buttercream, fill the push pop to the top and add a few mini chocolate chips to top it off! Place the lid on the top of the push pop and it's ready to be served.

    Chocolate Macarons with a Nutella Filling: Cookies Cupcakes and Cardio Recipe

    • 3/4 cup ground almonds
    • 1 cup icing sugar
    • 2 tablespoon unsweetened cocoa
    • 2 extra large egg whites
    • 1/4 cup granulated sugar
    • Hazelnut spread for filling (Nutella)

    In a food processor, place the almonds, icing sugar and cocoa. Mix for 15 seconds and then sift mixture into a large bowl.
    Place the egg whites in a stand mixer and whip until soft peaks form. Gradually add the sugar and continue whipping until a glossy meringue forms.
    Using a spatula, fold 1/3 of the almond mixture into the egg mixture. Repeat until all of the almond mixture is combined with the egg mixture.
    Put the batter into a piping bag fitted with a 1/2" round opening and pipe small circles onto a parchment lined baking tray. Tap tray on counter to remove any air bubbles. Allow to sit at room temperature for 30 mins. Then, insert into preheated 325F oven and bake for 10-15 minutes.
    Allow to cool on pan for 10 minutes and then transfer to a cooling rack to finish. When cool, spread hazelnut filling onto half and place another half on top! Enjoy!

    To make these cow cake pops, dip the cake pop stick into the melted chocolate, and then into the donut hole. Allow to harden. Once the chocolate on the stick has hardened, dip the donut hole into the melted chocolate to coat thoroughly. Allow to dry and add another coat if needed.

    Once the chocolate coating has hardened, you can start decorating it by applying the ears and horns. Cut a coloured melting wafer into ear shapes, and the white chocolate wafers into horn shapes, and insert each into the top of the cake pop.

    Using melting chocolate on the jelly bean, attach it to the front of the cake pop. Using the black piping gel, add the eyes, nostrils and black spots onto the cow.

    Items used in this apple pie recipe:

    Apple Pie Pastry
    2 1/2 cups all purpose flour (300g)
    1 teaspoon salt (5mL)
    1 teaspoon sugar (5mL)
    1 cup of cold butter (240g)
    1/4-1/2 cup cold water (60mL-120mL)

    Apple Pie Filling
    3 lbs apples, sliced, cored and peeled
    2 tablespoons lemon juice (30mL)
    1 teaspoon cinnamon (5mL)
    1/4 teaspoon ground nutmeg
    1/8 teaspoon salt
    1/4 cup granulated sugar (50g)

    Egg Wash
    1 egg yolk
    1 tablespoon heavy cream (15mL)

    Coarse sanding sugar for decoration

    To make the pastry, combine and mix the flour, sugar and salt in a food processor. Add the butter and use the "pulse" button to combine. You will be looking for a coarse texture, with small pieces of butter. Add the cold water and continue to pulse until the dough combines. If it is dry, add more water a tablespoon at a time. Divide the dough in half and wrap in plastic wrap. Cool in fridge for 1 hour, or overnight.

    When dough is chilled, roll out on a floured surface until 1/4"-1/8" thick. Place into pie pan. Set into fridge if desired.

    To make the filling, combine the apples, cinnamon, salt, sugar, nutmeg and lemon juice and mix to coat apples. Fill pie shell, piling up in the middle. Place in fridge again to keep cool.

    Roll out second disc of dough to the same thickness and place over top of apples. Be sure to vent the crust by pricking it with a fork or knife. Mix together the egg wash and brush onto the pastry. Sprinkle with sanding sugar if desired.

    Bake in preheated oven at 425F for 25 minutes. Lower temperature to 375F and continue to bake for 60-70 more minutes.

    Allow to cool for 2-3 hours before slicing.

    2 1/2 cups all purpose flour (300g)
    1 teaspoon salt (5mL)
    1 teaspoon sugar (5mL)
    1 cup of cold butter (240g)
    1/4-1/2 cup cold water (60mL-120mL)

    Apple Pie Filling
    3 lbs apples, sliced, cored and peeled
    2 tablespoons lemon juice (30mL)
    1 teaspoon cinnamon (5mL)
    1/4 teaspoon ground nutmeg
    1/8 teaspoon salt
    1/4 cup granulated sugar (50g)

    Egg Wash
    1 egg yolk
    1 tablespoon heavy cream (15mL)

    Cinnamon sugar (1 teaspoon cinnamon, 2 tablespoon sanding sugar)

    4" round pastry/cookie cutter

    Roll out pie dough to 1/4"-1/8" thick. Cut out 4" circles and place onto parchment lined baking tray. Spoon a tablespoon of pie filling into the centre of the pastry circle. Apply egg wash with a brush to the outer edge of half of the circle. Fold half of pastry over top of apples and press the edges together (kind of like a taco!). Press edges together with a fork to seal the turnover.
    Poke a hole with a fork or knife into the top of the pastry, brush with egg wash, and apply cinnamon sugar.
    Bake at 425F for 20-25 minutes, or until golden brown.

    Learn how to make a Halloween cake roll from scratch in this fun and colorful cake roll tutorial.

    Items used in this cake roll recipe:

    1 cup flour (120g)
    1 teaspoon baking powder (5mL)
    1/2 teaspoon salt (2.5mL)
    4 eggs
    1 cup granulated sugar (200g)
    1 teaspoon lemon juice (5mL)
    1/4 cup milk (hot) (60mL)

    Green, purple, orange and black gel paste
    Cherry pie filling
    Chocolate Halloween shapes (skulls, tombstones, bones) or gummy body parts/creepy crawlies
    Melted chocolate
    Chocolate cookie crumbs

    Combine the flour, baking powder and salt. Mix and set aside. In a stand mixer, whip the eggs, sugar and lemon juice until thick. Heat the milk and slowly add it to the egg mixture and whip until very thick.
    Divide batter equally into four bowls and colour each bowl with gel paste separately. Place each amount of batter into a piping bag for piping.
    Spray a jelly roll pan with non-stick spray and line with wax paper. Spray the paper as well. Starting with one colour, cut a small amount of the bag tip off, and pipe a straight line following the edge of the pan. Repeat using the next colour, until the pan is filled up.
    Bake at 375F for 10 minutes.
    Remove from oven and immediately invert onto a piece of parchment paper. Gently roll the cake up, with the parchment paper, starting at one end, and set aside to cool.
    When cooled unroll cake and fill with cherry pie filling. Re-roll cake (without parchment inside) and place on the cake roll on a plate or platter. Finish decorating the cake roll as desired using Halloween chocolates or candies.

    Pumpkin Coffee Cake Recipe:

    • 1/4 cup unsalted butter, softened
    • ¾ cup granulated sugar
    • 8 ounce pure pumpkin
    • 2 eggs
    • 1 1/4 cup all purpose flour
    • 1/4 teaspoon baking soda
    • 1 teaspoon baking powder
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon salt

    In a medium sized bowl, combine flour, soda, powder, cinnamon, ginger, nutmeg, cloves and salt. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs and pumpkin and mix until combined. Add dry mixture to wet mixture 1/4 at a time and mix until combined. Place into a greased 8" round cake pan and bake for 30-35 mins at 350F.

    Mushroom Cupcakes: Meringue Mushroom Cupcake Recipe from Cookies Cupcakes and Cardio

    Items used in this mushroom cupcake recipe:

    Meringue:
    • 4 egg whites
    • 1 cup granulated sugar
    • Pinch of Cream of Tartar
    • 1 teaspoon vanilla extract

    Cupcake decorations:
    • Green buttercream
    • Chocolate (brown) buttercream
    • dark cookie crumbs
    • light cookie crumbs
    • chocolate shavings
    • candy coated chocolate rocks
    • cocoa powder

    Meringue
    Combine egg whites, sugar, and tartar in bowl from stand mixture. Place over top of a simmering pot of water. Whisk constantly until mixture is smooth to touch and warm. Remove from heat and place bowl back into stand mixer fitted with whisk attachment and whisk on high speed for 10 minutes until meringue is white and fluffy and bowl is cool to touch.

    Mushrooms
    Line tray with parchment paper. Fill piping bag fitted with small round tip with meringue and pipe small round mounds for tops of mushrooms. Pipe stems for the mushrooms by creating a small skinny base. Bake at 200F for 60 minutes. Then turn oven temperature down to 175F and continue to bake for 45-60 minutes more until meringues are dry but not yet coloured.

    Melt dark and white chocolates separately. Using an offset spatula, first cover bottom of mushroom tops with dark chocolate and allow to harden. Switching to white chocolate cover the dark chocolate. While white chocolate is still soft, use a toothpick to etch out the "gills" of the mushroom cap. Allow to dry. Using a sharp knife core out a small piece of the mushroom cap (underneath), dip a stem in to the white chocolate, and insert into the cored out area. Allow to dry.

    Assembly
    To decorate the cupcakes, cover the top of the cupcake with chocolate buttercream. Place cookie crumbs, chocolate shavings, and rocks as desired to create the "floor" of a forest. Place mushrooms into the buttercream. Pipe small amounts of grass around the mushroom and rock bases. Sprinkle the top of the mushrooms with cocoa powder to give a more realistic effect.

    Snickerdoodle Cupcakes:

    1 tbsp baking powder
    1/2 tsp salt
    1 tbsp cinnamon

    1 3/4 c granulated sugar

    2 tsp vanilla extract
    1 1/4 cups milk

    Pumpkin Pie Filling:
    1/2 cup brown sugar
    3/4 cup pumpkin puree
    1/2 teaspoon cinnamon
    1/2 teaspoon ground ginger
    pinch cloves
    1/4 teaspoon salt
    2 teaspoon cornstarch
    1 egg
    3/4 cup evaporated milk

    Pie Pastry (or use store bought):
    2 1/2 cups all purpose flour
    1 teaspoon salt
    1 teaspoon sugar
    1 cup of cold butter
    1/4-1/2 cup cold water

    Small round cutter (2"-3")

    Mini pumpkin pies:
    Mix all ingredients for filling and set aside.
    Roll out pastry dough on a floured surface and cut into small rounds. Place each small round into a mini cupcake pan and press into the well. Fill with pumpkin filling. Bake at 375F for 10-12 minutes or until crust is golden brown. Allow to cool.

    Cupcakes:
    In a medium bowl, combine flour, baking powder, salt and cinnamon. Mix and set aside. In a stand mixer fitted with paddle attachment, cream butter and sugar until light and fluff. Add eggs one at a time and mix until combined. Add vanilla.
    Add 1/3 of the flour mixture and mix, and half of the milk to the butter mixture in the bowl and mix. Continue to alternate flour and milk until all is added into batter.

    Assembly:
    Line cupcake wells with wrappers and place a small amount (1tbsp) of batter on the bottom of each liner. Place mini pie in the centre of the batter. Cover pie with 2-3 tbsp of batter. Bake at 350F for 22-25 minutes. Allow to cool and finish by topping with buttercream.

    Halloween Candy Bark: Chocolate Bark Recipe from Cookies Cupcakes and Cardio

    This Halloween candy chocolate bark recipe is a great way to use up all those candy corn candies and chocolate bars you have kicking around after Halloween.

    Ingredients:
    2-3 cups Halloween candy (mini assorted chocolate bars, candy corn etc)
    White chocolate melts
    Orange chocolate melts

    Procedure:
    Chop the chocolate bars into small pieces, and any other candy into small bite sized pieces.
    Melt the white chocolate in a heat proof bowl for 60 second intervals at 50% temperature. Melt the orange chocolate in the same way in a separate bowl.
    Line a baking tray with parchment paper and spread white chocolate onto the centre of the sheet. Add orange chocolate in small amounts in various places on top of the white chocolate. Using a knife, swirl the orange chocolate into the white chocolate until a marbled effect is reached.
    Before chocolate hardens, place the Halloween candy into the chocolate as desired.
    Allow to harden by placing the fridge for 10-20 minutes.
    To serve, simply break chunks of the bark off at a time until you have desired amount.

    Roll out one pastry disk 1/4"1/8" thick for the bottom of the cookie. Top with a thin layer of apple pie filling. Roll out second pastry disk and slice into 12, 3/4" strips using pastry cutter. Apply six vertical strips on top of the apple filling, leaving a small space between each strip. Fold back strip #1, 3, and 5 onto themselves. Apply a horizontal strip across the centre of the pastry. Fold 1, 3, 5 back over. Fold strip 2, 4, and 6 back on themselves and place another horizontal strip over the vertical strips. Fold 2, 4, 6 back up. Fold back 1, 3, 5 onto themselves again, and apply vertical strip across. Repeat for the bottom half of the pastry.

    Using the cutter, cut out round cookies from the latticed pie. Place these cookies onto a parchment lined baking sheet. Brush with egg wash and sprinkle with cinnamon sugar if desired. Bake for 20-25 minutes at 425F.

    Learn how to make ice cream cone rainbow cake pops in this tutorial with our guest baker Paityn.

    To make the cake pops crumble one cupcake of one colour into a bowl and add one tablespoon of buttercream. Mix together until a playdough like texture is reached. Repeat for all colours.
    Use a small amount of each colour, combine together and roll into a ball. Place on a parchment lined baking tray and place in the freezer for 5 minutes.
    Melt the chocolate in the microwave by using 30-60 second intervals and stirring repeatedly.
    Dip the top of the cone into the melting chocolate and place the cake ball on top. Set aside and repeat process. Put into freezer for 5 minutes again to allow the chocolate to harden.
    Once the chocolate is hard, dip the ball and cone into the chocolate again, covering the cake ball. Allow to harden and repeat if desired. To apply sprinkles, re-dip the cone halfway and apply sprinkles and "cherry" on top!

    In a medium bowl, combine flour, baking powder and salt. Set aside. Cream butter and sugar in mixer until light and fluffy. Slowly add eggs, one at a time and incorporate. Add vanilla, zest and lemon juice. Mix. Add half of the flour mixture and slowly incorporate. Add half of the buttermilk. Repeat until flour and buttermilk is completely incorporated.

    Prepare cake pans for batter by using butter or a non stick spray. Bake at 350F for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.

    Allow cake to cool to room temperature before decorating.

    Prepare buttercream for the filling and decorating. You can use any technique for decorating the cake, and what you see in the video is a rustic, "splatter" effect on the cake.

    To provide a pleasing visual element, top with raspberries or other colorful fruit.

    Items used in this chocolate mousse cake recipe:

    Bottom Layer
    • 7oz bittersweet chocolate (I used chips)
    • 3oz butter (6 tbsp)
    • 3/4tsp espresso powder
    • pinch of salt
    • 4 eggs, separated
    • 1/3 cup brown sugar

    Middle Layer
    • 2 tbsp cocoa powder
    • 5 tbsp hot water
    • 7oz bittersweet chocolate (I used chips)
    • 1 1/2 cups cold heavy cream (whipping cream)
    • 1 tbsp granulated sugar
    • 1/4 tsp salt

    Top Layer
    • 3/4 tsp unflavoured gelatin
    • 1 tbsp water
    • 6 oz white chocolate (I used chips)
    • 1 1/2 cups cold heavy cream (whipping cream)

    Bottom Layer
    Combine chocolate, espresso powder and butter in a heat proof bowl. Melt in the microwave for 60 second intervals on 50% power. Mix until combined and melted. Allow to cool for 5 minutes.
    Separate eggs into two different bowls. Into the yolks, add the vanilla and whisk until combined. Add yolk mixture to chocolate mixture and stir to combine.
    Into a stand mixer fitted with the whisk attachment, combine the egg whites and salt and whisk until frothy (about 30s). Add half of the brown sugar and whisk for about 30s. Add the remaining brown sugar and continue to whisk until soft peaks form.
    Take 1/3 of the egg white mixture and add it to to the chocolate mixture. Whisk until combined. Add the remaining amount of egg white mixture and fold with a spatula until no white streaks remain.
    Place into greased 9"x 3" springform pan and bake at 325F for 30-40 minutes. Set aside to cool completely.

    Middle layer
    Mix the cocoa and water together and set aside.
    Melt the chocolate in a heatproof bowl and stir until smooth.
    Whip the cream, sugar and salt together until soft peaks form. .
    Mix the cocoa powder mixture into the melted chocolate until smooth. Add one third of the whipped cream into the chocolate and stir until lightened. Add the remaining amount of whipped cream and fold with a spatula until no white streaks remain. Spoon mixture onto the cooled bottom layer and place into refrigerator until set (about 30 minutes).

    Top Layer
    Mix the gelatin and water in a small bowl and set aside for 5 minutes. Bring 1/2 cup of cream to a boil and pour over top of white chocolate. Add gelatin and mix until chocolate is smooth.
    Whip cream in stand mixer until soft peaks have formed. Add one third of the whipped cream into the chocolate and stir until lightened. Add the remaining amount of whipped cream and fold with a spatula until no white streaks remain. Spoon mixture onto the cooled bottom layer and place into refrigerator until set (about 2-3 hours).

    Garnish as desired.

    Slice the chocolate mousse cake with a hot knife and serve immediately.

    Ingredients:
    2 1/4 cups all-purpose flour (250 grams)
    3 teaspoons baking powder
    1 1/3 cups granulated sugar (150 grams)
    1/2 teaspoon salt

    1 cup milk (1%, 2% or skim) (0.237 liters)
    1 teaspoon vanilla extract
    2 eggs
    Bake at 350 F for 30-35 minutes

    In the bowl of a stand mixer fitted with the paddle attachment, combine the dry ingredients. Add butter cut into small cubes, a few cubes at a time, and mix until the batter appears grainy with a sand-like texture to it. Next, add the eggs and and mix until just combined. Slowly add the milk, and the vanilla.
    Grease two 9" round cake pans, or one 9"x13" cake pan at 350F for 30-35 or until a toothpick inserted into the centre comes out clean. Allow to cool in the pan for 5-10 minutes, remove from pan, and cool completely on a wire wrack. Frost as desired.

    Items used in this cheesecake stuffed strawberries recipe:

    • 1 lb Strawberries
    • 1 package of sandwich cookies (Oreo cookies)
    • 2 block cream cheese (16oz)
    • 1/2 cup icing sugar
    • 1/2 tbsp vanilla extract
    • Mini sandwich cookies
    • white chocolate (melted)
    • sprinkles

    In a medium bowl, cream together cream cheese, icing sugar and vanilla extract until smooth. Set aside. Using a sealed bag, or a food processor, crush the Oreo cookies into a fine crumb. Add to the cream cheese mixture and combine.

    Using a sharp paring knife, remove the stem and core of the strawberries. Fill the empty cavity with the cookies and cream filling. To enable the strawberries to stand up, cut a small slice off the bottom of each to create a flat bottom.

    With your melted chocolate, cover the top of the strawberry (where the cookies and cream mixture is). To do this you can either dip the top of the strawberry directly into the chocolate, or you can use a piping bag to directly apply the chocolate to the top. While the chocolate is still soft, apply the sprinkles and mini sandwich cookie to the top.

    Serve immediately.

    Instructions:

    1.Spray an 8×8 inch pan with non-stick spray. Meanwhile, in a food processor or with a meat tenderizer/rolling pin, grind the cookies in batches (about 10-15 cookies per batch, depending on the size of your machine) until ground into fine crumbs. Set the crumbs aside in a bowl.

    2. In a large bowl, melt the white chocolate chips in the microwave until smooth. Pour in the can of milk and stir to combine. Dump the crumbs and some rainbow sprinkles (about ¼ cup) into the milk mixture and, using a rubber spatula, fold the mixture together until completely blended.

    3. Press the mixture evenly into the prepared pan in a single layer. Sprinkle the top immediately with additional rainbow sprinkles, if desired. Allow the bars to set, at room temperature, for about an hour before cutting into squares to serve. Makes about 16 small squares.

    Birthday cake pops recipe ingredients:
    cake crumbs
    buttercream
    lollipop sticks
    white melting chocolate wafers
    pink melting chocolate wafers
    brown melting chocolate wafers
    candy coated chocolate bits
    candles

    Procedure:
    The first step is to make the cake pops! Combine a tablespoon or two of buttercream with the cake crumbs, and form one disc. Roll this out to be about an 1" thick. Using a 1" round cookie cutter, cut out small "cakes". Set onto parchment lined baking tray and insert cake pop stick coated with 1/4" white melted chocolate. Repeat as many times as necessary. To make the cake slices, repeat process but when the "cake" is cut out, cut a triangular piece out of the round one. Set into freezer for 10 minutes to "set" the sticks.
    When sticks are set, coat cake pops completely with white melted chocolate and allow to harden. To decorate, pipe a small amount of white chocolate around the bottom edge and place small chocolate bits to create a border on the bottom of the cake. Using the pink melting chocolate, cover the top of the cake and have some "dripping" down the sides of the cake. When that is set, cover the cake with the chocolate. Finish with adding "cherries" red chocolate candies, and a candle!

    Heart shaped cake ingredients & equipment:

    • 8" square cake
    • 8" round cake
    • white buttercream
    • 2 pounds fresh strawberries
    • Wilton tip 104 and 1M

    Procedure:
    For this cake, you will need to make 2 cakes ahead of time. One a square and one a round cake. For the tutorial I used 8" pans, but you can use any sized pans as long as they are the same size (e.g. 9" round with 9" square). Bake for required time as recipes calls for and allow to cool completely.
    Place the square cake in the lower corner of a square cake board or plate. Cut the round cake into two equal pieces and place one half on the side of the square cake and the other half on the adjacent side to make a heart shape.
    Cover the cake with buttercream and smooth out any spots that might need to be filled. Allow the buttercream to harden by placing it in the freezer for about 15 minutes.
    To ice the cake sides, take a piping bag fitted with a Wilton 104 tip and place the wide part of the tip against the side of the cake. Keep the bag vertical, and use a zigzag motion about an inch wide and travel up the side of the cake. Repeat this step all around the cake until all of the sides are covered in "ribbons". Switching to a piping bag with a 1M tip, pipe rosettes using a circular motion around the border of the cake, where the ribbons come up to the top. A rosette can be piped by starting in the middle of it, and swirling around completely in a circle until a rose appears. Pipe a rosette border around the entire cake, leaving the centre empty.
    To finish the cake, slice the stems off of the strawberries and wash and dry them. Starting at the bottom tip of the empty heart space in the centre, place a strawberry, with the cut large part facing down on the cake. Arrange the strawberries to cover the entire centre of the cake, making a large, red, heart shape from the strawberries.
